Everything cooks together in one pot for maximum flavor:
- Slice the onion into semi circles and finely chop the garlic.
- Heat the olive oil in a pot over medium heat.
- Add the onion and sauté until softened.
- Add the chopped garlic and cook for about 1 minute until fragrant.
- Add the rice and tomato puree, stirring well so the rice gets lightly toasted and coated.
- Pour in 400 ml of water, or more if you prefer a slightly more runny texture.
- Bring everything to a boil.
- Cover the pot, reduce the heat, and simmer for 6 minutes.
- Add the kidney beans, cover again, and simmer for another 6 minutes.
- Serve warm.
