  • Bay leaf: 1 leaf
  • Potatoes: 600 g
  • Garlic: 3 cloves, minced

  • Chicken breast: 400 g, raw and skinless
  • Salt: 2 tablespoons
  • Black pepper: 1 dash
  • Onion: 1 large, sliced
  • Parsley: For serving
  • Olives: Optional, for serving

How to make it

The key is keeping the eggs creamy and silky:
  1. Place the chicken breast in a pot with water, the bay leaf, and salt. Bring to a boil and cook until the chicken is fully cooked through.
  2. Remove the chicken from the pot and shred it using two forks.
  3. Meanwhile, cut the potatoes into very thin strips and cook them using your air fryer fries method until golden and crispy.
  4. Heat the olive oil in a large pan over medium heat.
  5. Add the sliced onion and garlic and sauté until soft and translucent.
  6. Add the shredded chicken to the pan and mix well with the onions and garlic.
  7. Add the cooked fries and gently combine everything together.
  8. Lower the heat to very low and add the eggs.
  9. Stir continuously and gently until the eggs become creamy and coat the mixture without turning into scrambled eggs.
